  • 1/3 cup unsalted butter
  • 1 cup plus 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoons salt

-The dough

  • 2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 1 cup plus 1 tablespoon cold unsalted butter
  • 4 1/2 cups all-purpose flour
  • 2 tablespoons buttermilk
  • 1 3/4 granulated sugar
  • 1 egg

-The glaze

  • 1 tablespoon cream cheese
  • 2 tablespoons buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon sugar

Tool: Silicone baking mat

Directions

1. Prepare the filling: Dissolve the brown sugar, granulated sugar, cinnamon, melted butter and salt in a small bowl. Then mix them well and set it aside.

2. Make the Dough: Mix together the dry ingredients for the dough in a large bowl and then let stand for 5 minutes. Melt the butter and remove from the pan. Add the buttermilk and melted butter and then stir until a raggy dough forms.

3. Transfer the dough to a baking mat. Sprinkle the flour onto the dough surface and roll it until the dough is almost smooth. Making the dough becomes a rectangle, then roll into a larger 15-inch x 10-inch rectangle. Brush the dough with melted butter, and then sprinkle the brown sugar over the top. Press the filling firmly into the dough to make sure the best flavor forms.

4. Start with the long end and roll the dough into a log and pinch the seam. Then cut into several pieces as you like. Lightly flatten the rolls to pack the filling in the right place and brush the entire roll with the remaining melted butter.

    5. Place the cinnamon roll in a preheated 350° F oven for 20 to 25 minutes. Remove it from the oven until the crust is golden brown and flip them over onto the cooling rack and pull them apart.

    6. Top the glaze: Make the buttermilk glaze by whisking the buttermilk, cream cheese, vanilla extract, and sugar together in a small bowl. Drizzle the glaze over the cinnamon rolls and enjoy it!
