La meringue is a fluffy and light dessert by baking protein and sugar into a dry foam. It is a typical dessert collecting all the essence of French, Italian and Swiss cuisine.
According to the different practices and uses of meringue in these three countries, it can be roughly divided into three categories：La meringue française, La meringue suisse and La meringue italienne.
How to make meringue? Let’s take French meringue for an example.
- egg whites from 3 eggs
- caster sugar 150g
- gel foodcolour
- electric whisk
- piping bag
- round piping nozzles
- Preheat the oven up to 110℃.
- Prepare 3 small bowls.Make sure there is no water or oil in the bowls. Separate the whites from the eggs one by one. After that，mix all the egg whites in a large water-free bowl. This action is to avoid accidental mistakes in the operation, which could cause a waste of egg whites.
- Make sure the the mixing head of theelectric mixer is water-free and oil-free. Then turn on the electric mixer and adjust it to low spee Stir about 2 minutes until the protein turns to foamy. Tips: Stir 2 minutes for 3 proteins，but adjust the stirring time based on the amount of protein.
- After 2 minutes low-speed stirring, change the stirring speed to medium, and stir for 1 minute. Then，turnto high speed to reach the protein peak foaming， when the protein tip in the bowl can maintain the shape without bending with the stirrer pulled up.
- Keep stirringwith high speed. Add sugar from the rim of the bowl, add 1 spoon each time, stir until the Whites becomes.
- Place the protein intothe piping bag and squeeze it out to make a ghost shape. Squeeze three layers in different sizes: big, medium and small. Slightly fold each layer vertically.
- Place the protein in a preheated oven (110℃) and bake for 40 minutes. You can adjust the temperature based onthe different types and the colors of meringues . For instance,you are making a pure white ghost, the protein cream slowly baked. In this case, the temperature of 110℃ is appropriate. To finish the meringue making , paint the face with pigment .
